Sourced from Purest Origins

Hebbail meticulously selects butter from various Goshalas in regions known for their native cow breeds, including Shivamogga, Chikkamagaluru, Hassan, Sirsi, and even Punganur in Chittoor. A dedicated team rigorously tests the butter to ensure it comes exclusively from “Naati cows” (native breeds). The Malnad region of Shivamogga district, in particular, is noted for producing butter of exceptional quality. The fragrance and granular texture of the ghee are a testament to the environment and diet of these indigenous cows.

The Malnad Formula: A Secret to Perfection

Hebbail’s unique “Malnad Formula” involves a precise melting process. The butter is gently heated for 5 to 10 hours, strictly ensuring the temperature never crosses 90 degrees Celsius, mimicking traditional stove methods. This careful, slow melting process is key to achieving the exquisite quality of Hebbail Ghee.

Enriched with Medicinal Properties

In the final stages of preparation, traditional medicinal ingredients like betel leaves (ವೀಳ್ಯದೆಲೆ) are added. This is not just for flavor; they contribute to the ghee’s medicinal value, making it rich in minerals and antioxidants. This ancient practice, inherited from ancestors, is believed to help prevent common ailments like cough, cold, and phlegm, ensuring the ghee is suitable for all body types. Importantly, ghee retains its inherent qualities even with these additions. The addition of this also significantly enhances the ghee’s shelf life.

A Meticulous Process for Unmatched Purity

The journey from butter to golden ghee involves several crucial steps:

  1. Washing and Melting: After collection, the butter is washed and slowly melted.
  2. Filtration: The ghee undergoes multiple filtration stages. Initially, it’s filtered through cloth, followed by a second and a main filter to remove impurities, leaving behind a pure, golden yellow liquid. From 200kg of butter, approximately 160-165 kg of ghee is produced, with about 20 kg being residual impurities.
  3. Bottling: While still hot, the pure ghee is filled into food-grade bottles using an automatic machine, which ensures consistent quantity fills and prevents the loss of fragrance and moisture that could occur with manual handling.
  4. Curing: The freshly bottled ghee is then stored at room temperature for 3 to 10 days, depending on the climate (e.g., up to 10 days in summer), to allow it to mature before being sold to customers.

Extended Shelf Life and Hygiene

The addition of traditional leaves not only imparts medicinal benefits but also significantly enhances the ghee’s shelf life, allowing it to be stored for up to one year.
